Ingredients

    1 c. oatmeal
    2 ripe bananas, mashed
    2 egg whites
    1 ts. cinnamon
    1/4 ts. salt
    1 ts. vanilla extract

Tips

You may add 1/4 c chopped walnuts, chocolate chips or raisins. Additions will effect the nutritional values. These are good too, when you sandwich them together with natural peanut butter.


Directions

Mix all ingredients together. On cookie sheet lined with parchment paper or Silpat, scoop level scoops with a mechanical ice cream scoop (hmm that's a lot of scoops in one sentence...). Do no press down. Bake at 350 10 min., or until lightly browned on the bottom. Will be soft.
