Hearty Seafood Chowder Hearty Seafood Chowder
Number of Servings: 8

Ingredients

    1 can chopped clams
    1 cup frozen shrimp
    1 cup frozen scallops
    2 T. extra virgin olive oil
    2 T. butter
    1/4 cup chopped onions
    1/4 cup chopped celery
    2 cloves garlic
    4 cups reduced sodium chicken broth
    2 cups cold soy milk
    1/4 cup corn starch
    1 can creamed corn
    1 large potato, diced
    sage, thyme, pepper

Directions

saute onions, garlic and celery in oil and butter until soft. Add potato and saute another 2 inutes, then add 2 cups broth and simmer about 10 minutes. Add canned clams, shrimp, and scallops and simmer another 10 minutes. Add rest of broth and bring to boil. Mix corn starch in 1/2 cup of cold soy milk until dissolved. Add to boiling soup and stir. Reduce to simmer and add the rest of the soy milk and creamed corn. Season with sage, thyme and pepper. Simmer another 3 minutes and serve.
