    -2 cans (15.5 oz) Low Sodium Chickpeas, drained and rinsed
    -2 cans (14.5 oz) Stewed Tomatoes, no salt
    -12 oz Fresh Spinach
    - 8 oz Seitan
    - 1 large onion, diced (about 1-1/2 cups)
    - 2 tsp garlic
    - 1 Tbs Extra Virgin Olive Oil
    - 1 cube low sodium vegetable bouillon
    - 3 Tbs gound cumin
    - 3 Tbs ground coriander
    - 1-1/2 Tbs ground ginger
    - Tabasco, or other hot sauce to taste
    - salt and ground pepper to taste


Makes about 8 heaping one cup servings

-Disolve vegetable bouillon in 1-1/2 cups boiling water; set aside.
-Saute onion and garlic in olive oil till onion softens a bit.
-Add seitan and saute another minute or two.
-Add spices (cumin, coriander and ginger) and saute a few more minutes.
- add vegetable broth, chickpeas, tomatoes, and bring to a boil
- reduce heat and cover pan
- add fresh spinach (you may have to add in batches if it doesn't fit at once), and lift cover to stir occasionaly until spinach is cooked
- serve as is, or with rice if desired
