Ingredients

    365 Organic Quinoa, 1 cup
    Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth, 2 cups

    *Extra Virgin Olive Oil, 1 tbsp
    Salt, 1 dash
    Pepper, black, 1 dash
    Yellow Bell Pepper, 1 medium
    *Red Bell Pepper , 1 medium
    Del Monte Diced Tomatoes, No Salt Added, 0.8 cup
    Zucchini, .3 cup, sliced
    *Mushroom - White/raw, 0.4 cup

    Shrimp, 10 large
    Garlic, 1 tsp
    Butter, unsalted, 2 pat (1" sq, 1/3" high)

Directions

Cook the quinoa in the chicken broth for extra flavor. Fluff, and set aside.

Cook the shrimp in a skillet with butter and garlic. Set aside.

Saute the bell peppers, tomatoes, zucchini, mushrooms, salt, and pepper in the olive oil.

Mix quinoa, garlic shrimp, and bell pepper mixture.

Serve!
