Ingredients

    Fat Free Cottage Cheese, 0.5 cup
    Fat Free Sour Cream, 0.25 cup
    8 White Corn Tortillas
    Spinach, frozen, 1 package (10 oz)
    Cheese - Kroger Shredded Mexican Style, 1 cup
    Enchilada Sauce, 2 cups
    Garlic, 3 clove

Directions

combine thawed spinach, garlic, cottage cheese and sou cream.
put half the enchilada sauce in the bottom of a baking dish sprayed with pam.
divide the mixture into 8 and roll in corn tortilas. place in the baking dish seam side down.
top with cheese.
bake covered at 350 for 25 minutes. uncover and bake another ten minutes.

Serving Size: makes 4 servings, 2 enchiladas each.
