    Leeks, 2 leeks
    Potato, raw, 5 cup diced
    Butter, unsalted, 2 pat (1" sq, 1/3" high)
    Chicken, stock, organic, boxed (Costco), 6 cup
    Water, tap, 2 cups


Cut leeks in half lengthwise then slice into 1/4 - 1/8 inch pieces. Cook in a large pot with butter on medium low heat until softened.

Peel potatoes then cut into small pieces.

Add potatoes, water, and chicken stock to pot. Bring to bubble. Simmer for 15 minutes.

Test potatoes for done-ness then if done puree soup.
