Ingredients

    1 Small to Medium Eggplant
    2 Eggs
    1 C Grated Parmesan Cheese
    1/2 C Mozzerella Cheese
    1 1/2 C Marinara Sauce
    1/2 Tsp Garlic Powder
    1/2 Tsp Oregono
    1/4 Tsp Salt
    1/4 Tsp Pepper
    1/8 Tsp Cayene Pepper

Directions

Slice unpeeled eggplant 1/4" thick

Pour parmesan cheese in a shallow bowl
In a separate bowl add 2 eggs and whisk in garlic, oregono, salt, pepper and cayene pepper

Dip eggplant in egg, then in parmesan cheese to coat both sides. Lay on oil sprayed baking sheet.

Bake for 25-30 mins

Once browned, remove from the oven, layer with ricotta cheese, marninara sauce and top with mozzerella cheese.

Bake for another 15 mins
