    2 slices center-cut bacon
    1/2 cup thinly sliced fennel
    1 (5-oz) package fresh baby spinach
    1/2 cup sun-dried tomato halves
    1 tablespoon fresh lemon juice
    1 teaspoon honey
    1/4 teaspoon salt
    1/4 teaspoon freshly ground pepper


Serve with Honey-Balsamic Chicken Cutlets


Cook bacon in a large skillet over medium-high
heat until crisp; remove bacon to paper towels,
reserving 2 tablespoons drippings in a small
bowl. Crumble bacon. Combine bacon, fennel,
spinach and sun-dried tomatoes in a large
serving bowl. Add lemon juice, honey, salt and
pepper to bacon drippings in bowl, and whisk
together. Pour dressing over salad, and toss to
coat. Let stand 5 minutes or until spinach is
slightly wilted.

Serving Size: makes 2 servings
