Ingredients

    3 c Cauliflower, grated
    2 Chicken Breast, skinless, cooked and cubed
    1.5 c Peas and carrots, frozen
    2 Eggs, beaten
    1 small/med onion, chopped
    3 tbsp soy sauce
    salt and pepper to taste

Tips

Marinade chicken in soy sauce, lemon grass, garlic, and fish oil over night.


Directions

In a large skillet, heat 1 tbsp of oil. Saute minced onions until tender. Add cauliflower and garlic and stir-fry for approximately 5 minutes stirring constantly. Add 1 tbsp of soy sauce and chicken and stir until mixed. Push mixture to side of pan. Add more oil if necessary. Scramble eggs in empty side of pan until done but still moist. Stir eggs into "rice," add peas and carrots, remaining soy sauce, and cover with lid. Allow peas and carrots to cook, stirring occasionally. IF mixture gets too dry, add a small amount of water or more soy sauce.
