    Wild Boar 10 oz
    Red Wine, 3 glass (Vino Nobile di Montepulciano or other full bodied red)
    Tomato Paste, .5 can
    Thyme, fresh, 1 tsp
    Bay Leaf, 2-3
    Italian flat Parsley, 10 sprigs
    White Onions, raw, 1 cup
    Kalamata, Green Olives, not pitted, 4 oz


Trim the fresh meat of nerves, gristle and fat and marinade with one glass red wine and juniper berries.

Sautae onions in the olive oil until opaque, add the wild boar (drained of marinade) and brown all over.

Add rest of the ingredients and reduce the heat, half-cover and keep on cooking for 1- 1/2 hours or until the meat is tender.

Serve with hearty grain rolls and green salad.

Left over wild boar can be ground up and used as a sauce with pappadella or other flat noodles.
