    2 pounds cubed beef sirloin, lean
    3 large onions, coarsely chopped
    2-3 large green bell peppers, sliced
    1 large red or orange pepper, sliced
    1 Tbsp olive oil
    4 cloves garlic, crushed
    salt and pepper
    3 tsp sweet paprika
    1 can diced tomatoes
    4 cups chicken or beef broth
    6 cups water


This develops a tasty broth. If you would like a thicker gravy rather than broth you can thicken it at the end by making a slurry of cold water and flour and slowly adding to the bubbling pot.


Heat oil in a large dutch oven. Add beef cubes and brown on all sides. Add onions and peppers, stir and keep browning. Add garlic and paprika, stir until fragrant. Let a good brown crust develop but be careful not to let anything burn. Add broth and tomatoes, season with salt and pepper. Bring to a boil, add water and cover. Simmer for 1-2 hours string occasionally, a more water if too much evaporates.

Serving Size: makes 10 1 1/2 cup servings
