I have taken and modified this recipe from my hypothyroidism diet resource. My husband liked it a lot so I wanted to keep using it for meal planning. I have taken and modified this recipe from my hypothyroidism diet resource. My husband liked it a lot so I wanted to keep using it for meal planning.

Ingredients

    2 tbsp extra virgin olive oil
    1 c chopped onions
    2 tbsp minced garlic
    8 oz ground turkey
    1 1/2 c crushed tomatoes
    1 tsp chili powder
    1 c frozen or fresh zucchini & squash mixture
    3 c frozen or fresh green beans
    sea salt and pepper to taste

Tips

Fresh is always better and healthier also lower in calories. My resource has this listed as 1 serving

Directions

Heat the oil in a large skillet and cook the onion, garlic and ground turkey until meat is completely cooked (no longer pink), and the onions are soft. Add the tomato, chili powder and zucchini & squash mixture, cooking until heated through. In the meantime, steam the green beans. Divide the cooked beans between 2 plates (1 1/2 c) and top with the turkey mixture
