Ingredients
-
mixed nuts
gluten free bread crumbs (or sliced bread)
feta cheese
provalone cheese (or fave cheese of your liking)
onion, raw
1 egg, optional
Tips
add bbq sauce, marinara sauce or any other sauce of your liking. (you can also change and put your favorite types of cheese or nuts... pecans and cashews are much sweeter and make for a not so bland tasting meatball)
Directions
use food processor to grind up nuts and bread slices (or 1 cup gf bread crumbs).
Separately grind up onion and cheese, and (optional egg), then add to bread/nut mixture.
Roll into balls and bake in oven at350 for 30-40 minutes depending on oven and desired level of softness. (Bake until browning occurs )
** if seems too mushy before baking, add more bread crumbs. mixture should be wet enough to stick together but not too mushy that it can't form/hold a ball shape
