Ingredients

    1 1/2 c. broccoli florets, steamed
    4 oz. cream cheese
    1/2 c. heavy cream
    1 1/2 c. chicken broth
    dash salt
    1 c. cheddar cheese

Tips

Sometimes I like this soup thicker. If you like thicker soups, cut the broth in half.

Also, sometimes I make this with water instead of chicken broth. It comes out less salty and less "chicken-y."


Directions

Steam the broccoli till tender. Mix 1/2 c. of broccoli, all of cream cheese and all of cream in blender until smooth.

Pour mixture into a pot and add the rest of the ingredients, except the cheese. Heat over medium heat until it comes to a simmer.

Once heated, add the cheddar cheese and mix until melted completely.

Serving Size: Makes 4 bowls
