    1/4 cup butter or margarine
    1/4 cup apple sauce or apple butter
    1 cup sugar
    2 eggs
    1 cup mashed bananas (3 large)
    1 3/4 cups flour (can use whole wheat)
    1/4 cup of ground flax
    1 tsp baking soda
    1/2 tsp baking powder
    1/2 tsp salt
    1/2 cup unsweetened shredded coconut (optional)
    1/2 cup chopped walnuts (optional)


Preheat oven to 350F (180C)
cream butter,apple sauce(or butter) and sugar together. Add eggs one at a time, beating until smooth. Blend in mashed bananas ( I prefer to slice frozen bananas to get little chunks of bananas after blending)
In second bowl, stir dry ingredients and add to banana mixture. Stirring only to moisten. Transfer to loaf pan and bake for 1 hour (20 mins for mini loaves) or until toothpick comes out clean.

Serving Size: makes one loaf or 12 mini loaves
