    1 Spagehetti Squash (4 cups)
    1 lb lean ground beef
    I med. onion chopped
    1 cup Pasta/Pizza Sauce
    3 large eggs
    1 cup chopped green bell pepper
    1 cup grated mozzarella cheese


Cut squash in half, place cut side down an a 9X13 dish and add about 1/2 cup water. Cook at 400 for about 30-60 minutes (depending on size of squash) until tender. Once squash is done remove threads and place in a greased baking dish (8X8 or larger). Brown ground beef with onion and seasonings. Add sauce and mix well. Add mixture to baking dish and mix with squash threads. Beat eggs and add to baking dish and mix everything together until you can no longer see the eggs. Place in preheated 400 degree oven and bake for 1 hour or until the top forms a slight crust that doesn't give in when you press in the middle. Cut in half and then each half in thirds! makes 6 good sized servings!
