Ingredients

1 1/2 c. Whole Oats (not quick-cooking kind)
1/2 Sliced Almonds
1/4 Shredded Coconut
2 TB Unsalted Butter
3 TB Honey
1/2 Dried Cranberries
Directions
Makes about 3 cups.
Preheat oven to 350.
Mix together oats, almonds and coconut in a small bowl. In a microwave safe bowl, melt butter and honey together (about 20 seconds). Drizzle butter/honey over the oats mixture and stir to coat. Put in a 8x8 baking pan and bake for 20 minutes, or until granola is light golden, stirring every 5 minutes or so.
While granola is still warm, stir in dried cranberries.
Note: You don't want to bake the granola with the dried fruit in it or it will get really dried out and not tasty.
