Ingredients

    1 Tbsp canola oil
    1 c chopped onions
    1/2 c chopped celery
    1 c chopped sweet red peppers
    1 c chopped sweet green peppers
    1 c chopped carrots
    1/2 c mushrooms, chopped
    I 13 oz can tomato paste
    1 28 oz can whole tomatoes, break up with your hands
    1 650 ml jar Classico tomato and basil pasta sauce
    1/2 c TVP (Texturized vegetable protein: looks like dried ground beef and adds some protein. Soy-based.)


Tips

Sometimes I purée this with an immersion blender. I would add zucchini too but don't have any today. Fine without the jarred sauce too and without tvp according to your tastes/pantry supply.


Directions

Sauté onions and celery in oil. Stir in other veggies as you chop them then stir in seasonings. I use garlic powder, oregano, pepper and italian seasoning. Add canned tomatoes, broken up; stir in tomato paste and can of water and jarred sauce. Add tvp after soaking and rinsing it for a few minutes in warm water. Season, simmer for about 1 hour until carrots are fork- tender.
