This recipe has a little bit of everything to give it super flavor. If you don't want as many calories, you can halve the butter or use light margarine, and nix the sour cream. Ingredients

1.5 lbs Red Potatoes (do not peel)
2/3 C Buttermilk
1/3 C Sour Cream
2 TB Butter
4 Scallions
2 Cloves Garlic
Directions
Cook Potatoes with skin on until soft.
While potatoes are cooking, mince or finely grate garlic into large bowl. Slice the scallions, reserving green tops. Add white and light green parts to bowl Add butter. Microwave on high about 2 minutes until garlic and scallions are softened. Add buttermilk, salt and pepper to taste.
When potatoes are done, add to bowl. Mash with masher to desired consistency. Stir in sour cream and reserved green tops. Re-mash if desired.
