    1tbsp Coconut oil
    1 carrots - diced small
    1 cup chopped onion
    28oz petite diced tomatoes
    2 cups red lentils (rinsed)
    1 tbsp dried basil
    1 tsp cumin
    cayenne (optional)


Melt coconut oil in a deep pot. Add carrots and saute for a few minutes...then add onion and cook until transparent.
Add in the rest of the ingredients and simmer on low for 15-20 minutes or until lentils are tender.
Puree half the pot and add back in.
Add cayenne and salt/pepper if desired.

Serving Size: 1/4 pot
