Easy scalloped potatoes with a ton of taste and actually decent for you! Easy scalloped potatoes with a ton of taste and actually decent for you!
Number of Servings: 4


    1 1/4 lb red potatoes, sliced thin
    1 1/4 c chicken broth (I used a low sodium organic broth)
    2 T butter, unsalted
    2 T flour
    2 T mayonaise
    1/2 c onion, chopped
    1/2 t paprika (go for the Hungarian smoked paprika for a great flavor)
    Pepper to taste
    1/4 t salt -- if needed, I don't add it when I make this recipe


Makes 4 generous adult size servings (really close to 5 or 6 if adding veggies or another side).

Preheat oven to 300 degrees, and get out a small casserole dish.

To make the sauce, melt butter in a saucepan. Add flour and stir with a whisk 2-3 minutes to cook out the raw flour taste.

Slowly add the broth and mayo. Cook another 5 or so minutes until it has thickened and is starting to boil. Add pepper to taste (and salt, if desired).

Layer potatoes and onion in the dish.

Pour the sauce over the potatoes, trying to coat each potato to ensure it stays moist.

Sprinkle paprika over the top.

Cover and place into the 300 degree oven. Bake for 90 minutes or until bubbling nicely.
