Introduction

Ingredients

    2 large eggs, scrambled
    1/2 cup fresh spinach, shredded
    1/4 cup sliced mushrooms
    2 TBS. vermont white cheddar, shredded
    Mist of extra virgin olive oil

Tips

Be very careful when flipping the omelet. May serve with 1 tbs. salsa.


Directions

Shred the spinach and slice the mushrooms. In a small bowl, crack eggs and whisk with a fork till well blended. Mist a 12 in. skillet with olive oil, and place over medium high heat. When skillet is hot add eggs and tilt pan to distribute evenly. Cook for about 1 minute then flip to other side. One one side add spinach and mushrooms. Next add shredded cheese. Fold the other side over and gently press. Cook for a few seconds more. Remove to plate and serve immediately.

Serving Size: Makes one omelet.
