    1 pkg whole wheat penne
    1 can fire-roasted diced tomatoes
    1.5 c. sun dried tomatoes, dry packed, diced
    8 black olives, sliced
    1.5 chicken breast, chopped
    about 15 baby bellas, sliced
    1/4 c. ricotta (not necessary)
    1 T. shredded fresh parmesan


Cook pasta as directed. Drain. This recipe is designed for left-overs. Everything is meant to be already cooked, and thrown together and re-heated.

After pasta is cooked, throw everything together except ricotta and parmesan. Simmer for about 30 minutes or so, then right before serving, mix ricotta through. Sprinkle with parmesan and serve.
