    2 tbsp. butter
    1 onion, minced
    1 teaspoon garlic, minced
    2 cups chopped fresh broccoli
    1 1/2 cups shredded mozzarella cheese
    4 eggs, well beaten
    1 1/2 cups milk
    1 teaspoon salt
    1/2 teaspoon pepper
    2 cups rotisserie or other cooked chicken breast - skin removed.


This recipe calls for a crust which I am eliminating - may affect cook time. Check after 15 minutes. You want to cook just until the center is set.


Preheat oven to 350 degrees.
Over medium heat, melt butter in a large sauce pan. Add onions, garlic and broccoli and cook until veggies are soft - stirring occasionally. Spoon vegetables into pie pan coated w/ cooking spray. Sprinkle w/ 2/3 of cheese and cubed chicken. Combine eggs and milk and season w/ salt and pepper. Pour egg mixture over vegetables and chicken. Sprinkle with remaining cheese.

Bake until center is set - 20 to 30 mins.
