A wonderful gluten free pancake! A wonderful gluten free pancake!
Number of Servings: 8



    1/2 c. 2% Milk
    2 Large Eggs
    1 1/2 TBSP Melted Butter
    1 tsp Real Vanilla Extract


    3/4 c. White Rice Flour
    1/8th c. Tapioca Flour
    1/8th c. Flax Meal
    1 1/2 TBSP Baking Powder (Aprox 5 tsp.)

    * Extra butter for cooking.


Make sure there is enough butter in the skillet/pan when cooking these! Freeze any leftovers.


Beat eggs till frothy, add in remaining wet ingredients and whisk well. Whisk together dry ingredients and stir into wet, do not over mix! Cook in hot buttered electric skillet at 300-325 degrees or on stove over medium heat aprox 4-5 mins. Flip and cook aprox 4-5 more minutes or until golden. Serve and enjoy!

Serving Size: Makes 8 1/4c. pancakes.
