Introduction

Ingredients

    1 can of chopped green chilis (I used 7oz)
    2 cans of diced tomatoes (14oz)
    3lbs chicken breast, diced to 1 inch pieces
    1 onion diced
    1 packet of taco seasoning
    1 can of black beans drained and rinsed
    2 cups Monterey Jack cheese shredded
    2 tbsp of Extra virgin olive oil

Tips

This is a Betty Crocker recipe that I modified, it called for Chorizo, but I don't like that, so I made it without. It is super yummy, and still mild enough for everyone to enjoy. If you like spicy you may want to add some jalapenos.


Directions

In Dutch oven, add 1 tbsp of olive oil, then add chicken and cook on all sides 6 to 10 minutes or until browned on outside and cooked through. Transfer to plate.
Add remaining tablespoon of oil to same Dutch oven. Add onion, cook 4 to 5 minutes or until onion softens. Stir in seasoning mix and chilis; cook 1 minute longer. Open tomatoes, and add with liquid. Heat to simmering.
Add chicken and beans. Return to simmering, and cook 5 minutes to allow flavors to combine. Remove from heat and stir in cheese. Serve with lime over rice or tortillas.
