Ingredients

    225 g Bacon (Fat trimmed, sliced)
    2 Red Onions (Sliced)
    4 Eggs
    3 Pizza Bases
    6 tbsp Tomato Paste
    5 tbsp Fresh Parsley (Chopped)
    300 g Mozzarella Cheese (Grated)
    4 tbsp Extra Virgin Olive Oil

Directions

Pre-heat oven to 220C.
Boil water in saucepan over medium heat, adding eggs and boiling for 7 minutes.
Remove from saucepan, break shells and slice thinly.
Fry bacon in non stick fry pan over medium heat until crispy.
Oil pizza bases and cook pizza on baking tray for 8 minutes in oven.
Remove from oven, spreading tomato paste over pizza.
Add bacon, onion, egg, parsley and mozzarella.
Bake pizza base and toppings for 15 minutes in oven.
Serve
