    Tofu, Extra firm block, rinsed and crumbled
    1.5 Tbsp chili powder
    1 Tbsp Cumin
    .25 tsp (Divided in half) Salt
    3 Tbsp(Divided in half) Olive Oil
    1 Zucchini sliced
    4 Scallions chopped
    .5 cu Frozen Sweet Corn Thawed
    .25 Mexican blend Cheese
    2 Tbsp Fresh Cilantro
    4 Tbsp Salsa(Divided half)


Place half the Oil in a non stick skillet and heat. Add Tofu, Chili powder, Cumin and half the salt. Heat for 8 mins approx. and Stir. Remove Tofu from pan. Add half the Oil in the pan again. All add Zucchini slices, Scallions, Corn and Fresh Cilantro and other half of the salt. Stir often and heat approx 4 mins. Add Tofu back into the pan. Cook an additional 3 mins and then turn off heat and had .25 cu Of Cheese to the pan. Stir to mix. Serve with 2 Tbsp of Salsa on the side
