Ingredients

    4 medium potatoes, peeled and diced. (About 3 cups)
    2 Tbsp canola oil
    Salt and pepper to taste; any other seasonings.

Tips

I would include onions but there were plenty with the grilled vegetables already.


Directions

Peel and dice potatoes. Parboil (cook till slightly soft but not mushy), then drain. Toss with oil and salt or seasoning salt and fresh ground pepper to taste.

Place in a sturdy foil pouch, seal well and slide onto tray for support as you take it to the bbq. Cook about 10-15 minutes each side, turning carefully to avoid tearing the foil.

Serving Size: Makes 4 servings, about 3/4 cup each.

    This was easy and delicious. I added onions and carrots, basil, thyme and Mrs. Dash. It was a great dish with our freshly caught BBQ lake trout. - 5/10/20
