Ingredients

    1.5 cups Artichoke Hearts, drained & lightly chopped
    1 jar of 12 oz. Roasted Red Peppers, chopped
    1 8-oz. can of Mushroom slices & stems
    3 oz. Black Olives, sliced
    1.5 Oscar Meyer's Ham and Turkey 4 slices per portion
    3 tbsp Red Wine Vinegar
    1 tbsp Garlic Powder
    .5 tbsp Black Pepper
    1 package of Ole Spinach & Herb Tortillas

Tips

I personally don't warm up the tortilla but you can if you wish. Also, I put it as a side item for dinner but it's filling enough to serve as your main course. And if you want to go vegetarian, simply leave out the deli products. It's very tasty all on its' own!


Directions

After you've drained and given the vegetables a light chop, mix them all together. Add the vinegar, garlic powder and pepper and stir. Cover and let it chill in the refrigerator for at least 30 minutes. The longer you let it sit, the more flavor it infuses.
Once you're ready to eat, get the ham and turkey and give it a light chop. Add it to the vegetable mixture. Now portion it out onto each tortilla like you would a burrito. Enjoy!
