Ingredients

    1 cup Quinoa, cooked according to package directions
    2 Tbsp Canola oil (or other oil for stir-frying)
    1 tbsp sesame oil
    4-5 spears Asparagus
    1-2 stalks broccoli
    1/4 small head of cauliflower
    2-3 tsp ginger
    2-3 cloves garlic
    2-3 spring onions
    1/2 bunch of Kale
    1/4 cup vegetable or other bouillion
    1/4 cup soya sauce
    1 tsp fish sauce
    1 tsp sezchuan sauce (optional)
    1 tsp Sriracha sauce (optional)

Directions

Cook the quinoa according to directions. (This can be done in advance if desired).
Cut the asparagus into 1 inch pieces
Cut the broccoli stalk into 1 inch pieces and use the flowerets.
Finely chop the ginger and garlic
Trim and chop the Kale
Combine the stock, soya sauce, fish sauce etc.
In a medium wok, heat the canola and sesame oil. Add the asparagus, broccoli, cauliflower and stir fry for a few minutes. Add the ginger, garlic and green onions and stir fry a couple more minutes. Add the quinoa and the sauce. Let cook for a few more minutes. Serve hot.
