I can have cornbread - YAY! I can have cornbread - YAY!

Ingredients

    1 TBSP LouAna Coconut Oil
    1 TBSP Butter
    1 TBSP Almond Flour
    2 TBSP Cornmeal
    2 TBSP Flax See Meal
    1 Jumbo Egg
    Dash of salt
    1 tsp Baking Powder

Tips

Very good with chili!


Directions

Melt butter and oil; whisk egg into melted butter and oil (allow to cool enough otherwise it will cook the egg).
Fold in all remaining ingredients except the baking powder.

Mix well and once mixed, add the baking powder and mix again.

Put in your 4 inch ramekin and microwave for 1 minute (or more, microwave times will vary depending on your microwave)

Serving Size: Makes 1 muffin!
