Introduction

You can really make this your own. Use whatever cheeses or other ingredients you may have on hand. Also, brown rice would be a good addition. (I only had white rice when I made this.) Number of Servings: 4

Ingredients

    4 medium green bell peppers
    1 cup cooked rice (brown or white)
    1 can ro-tel, drained
    1/4 cup grated cheese (You can use whatever cheese you)
    3 tbs butter, more or less to preference.

Directions

1) Cut the top off each green pepper and remove seeds.

2) Prepare white rice and brown ground beef. Combine with one can of drained ro-tel, parmesean cheese, and butter.

3) Bake in oven at 350 degrees for approximately 45 mins to 1 hour, or until peppers are tender.

Serving Size: 1 stuffed pepper
