    700g Flour,
    6g yeast,
    2tsp sugar,
    3tsp salt,
    650ml water,
    3tsp vital wheat gluten, oil for bowl coating


Proof yeast, mix remaining dry ingredients. Add yeast, remaining water (110F), mix well. When risen, turn out and add 1tbsp flour sprinkled. Fold in to form loaf. Dust top and sides, cover. Preheat oven and vessel to 425F, bake for 15min with lid or with water vessel beneath. Remove and continue baking until crust is golden brown (~20 min). Let cool wrapped,
