Introduction

This is a crock pot dinner with minimal cooking (rice) to go along with serving the final dish. It can be turned from Fajitas to Tacos to Tacos Salad very easily. We've adapted it to what's best for us on practice/game night! This is a crock pot dinner with minimal cooking (rice) to go along with serving the final dish. Ingredients

    4 Chicken Breasts, cut into strips
    1 onion, chopped
    1 can Chicken Broth
    1 packet Taco Seasoning
    1 tsp Salt
    0.5 tsp Paprika
    1 tsp Garlic (you can leave this off, we like Garlic - a lot)

    4 Tbsp Light Sour Cream
    1/2 C Shredded Chedder Cheese
    2 C Brown Rice
    2 C Baby Spinach, shredded (or your choice of shredded lettuce)
    tortilla chips, tortillas, etc. depending on how you choose to eat the dish!
    +Salsa if you want to add it on top!

Directions

The first 7 ingredients go into crock pot and cook on low for 8-10 hours. Then cook rice just before serving. Serve with rice, sour cream, cheese, chips, and shredded spinach leaves.

Serving Size: Makes enough for 2 adults and 2 kids with leftovers for a big lunch the next day!
