Introduction

Light pasta dish, very adaptable Light pasta dish, very adaptable
Number of Servings: 8

Ingredients

    1 cup cherry tomatoes halved
    2 plum tomatoes diced
    handful 8 or so fresh basil leaves torn
    approx 2 TBSP of light extra virgin olive oil
    4 oz of fresh mozarella torn
    8 servings of low carb pasta of choice
    salt and pepper to taste
    dash of Balsalmic Vinegar, to taste

Directions

put tomato, basil oil, salt and pepper in serving bowl, I mix with my hands and gently squeeze the tomatoes to make a sauce. Next I drain and add the pasta. I just put it in hot from the pan. It will warm the "Sauce" When it cools a little I add the cheese. This recipe is very adaptable, you can put pretty much anything in it and it will be great. spinich and feta tomatoes and toasted pinenuts. Tomatoes, avocado, fresh salad shrimp(cooked), lemon juice and zest. It has limitless potential. I just find a healthier pasta and go from there. We dont like whole wheat we prefer dreamfields low carb.
