    1 Tbsp olive oil
    16 oz boneless, skinless chicken breast meat, cut into 1 1/2" X 1/4" strips
    2 medium carrots, peeled and thinly sliced
    1 bunch green onions, chopped
    1 small yellow or red bell pepper, seeded, deribbed and thinly sliced
    2 Tbsp low sodium soy sauce
    1/3 cup chopped celery
    2 cups chopped broccoli
    2 cloves garlic, pressed
    1/2 tsp white pepper
    2 Tbsp chopped cilantro, fresh or 3/4 tsp dried
    1 Tbsp sliced almonds


Heat the oil in a skillet with a tight fitting lid over medium-high heat; saute chicken, carrots, garlic, green onions and red bell pepper until chicken is opaque and white (about 4 minutes), stirring constantly. Add soy sauce, celery, broccoli, white pepper and cilantro; blend well. Reduce heat, cover and simmer for 5 minutes. Sprinkle with sliced almonds.
