Ingredients

1C. yellow corn meal
1C. all purpose flour
1/3 C. sugar
1 tbsp baking powder
2 teaspoons lemon zest
1 teaspoon salt
1C. milk (I use 2%)
2 large eggs plus 1 yolk
1/4 C. honey
1/4 C. EVOO
Tips
Pour the oil and honey, and other wet ingredients into the same cup and the honey comes out more easily...if not it will stick to the cup.
The batter is kind of runny, I used a glass purex measuring cup to pour my batter easier. My muffins were done in 17 minutes, it may depend on your oven as to how fast these cook. I used a gold colored pan so if you have a dark pan as well you may need to cook these for a shorter time as well.

Directions
Preheat oven to 375 degrees and grease a 12 cup muffin tin; you can also use paper baking cups instead.
Whisk cornmeal, flour, sugar, baking powder, lemon zest and salt in bowl.
In another bowl whisk the milk, eggs, honey, and olive oil. Add the dry to the wet and stir just until mixed. Pour batter evenly into cups and bake 18-20 minutes.
