Ingredients

! medium onion, chopped
2 Tbsp butter
1/2 lb mushrooms, sliced
2 Tbsp Pasta Herb Spice Blend (See Tips)
1 15.25 oz can crushed or diced tomatoes
2 Tbsp Tomato Paste
1/2 cup dry white wine or chicken broth
Salt to taste
Tips
I used a pasta herb by The Gourmet Collection that contains a mixture of the following: Red bell pepper 20%, onion, basil 10%, oregano 10%, sage 10%, rosemary 10%, garlic, thyme, black pepper, celery seed, coriander, marjoram, chives, parsley (Salt Free.) I poured this over chicken that was cooked on the foreman grill and pre-seasoned. Less salt was necessary than pasta would require.
Directions
Saute 1 chopped onion in butter until lightly browned. Add mushrooms and spice blend to taste. Stir until mushrooms are soft. Add tomatoes, tomato paste and wine or chicken stock. Simmer until thickened. Serve over selected entree such as pasta, meat or vegetables.
