Ingredients

    1 tomato in wedges
    1/2 cup cucumber
    1-2 red chillies sliced
    2 lemons sliced
    25gm sweet corn
    1 chicken breast sliced
    1 cup iceburge lettuce shredded
    1 carrot in batons
    1/2 cup of Cheddar or colby low fat cheese diced

Tips

If you don't like chillies you can use 2 limes instead.


Directions

Step 1: slice and seed the chilli, slice the lemon ( leave about 2 slices of lemon out and put it in a bottle of cold water in the fridge to have with tea) and put them in a medium pot of water, than slice the chicken and put it in there. Bring to boil cook for 10 minutes.
Step 2: slice tHe cucumber, tomato, baton the carrots, dice the cheese and shred the lettuce. Mix together with the corn.
Step 3: serve and enjoy.
