Introduction

Ingredients

    1 lb. red kidney beans, dried
    1 medium yellow onion, chopped
    2 large stalks celery, chopped
    1 medium green bell pepper, chopped
    2 cloves garlic, minced
    14 oz. pkg. smoked sausage, sliced ( Hillshire used for recipe)
    hot sauce, to taste
    salt, to taste
    black pepper, to taste

Directions

Soak beans covered in water overnight. Drain water off and add 6 cups fresh water. Bring beans to a boil, then lower heat to a simmer and cook for 1-2 hours. When beans are soft, mash most of them with a potato masher or a wooden spoon. (This thickens the sauce.) Add the vegetables, meat, and seasonings. Stir well. Cook for an additional 1-2 hours. Taste to adjust seasonings. Serve over hot rice.
