Ingredients

    about a dozen jalapeno peppers
    about dozen pineapple chunks (cut in half so you have 24)
    about 2 dozen teaspoons fat free cream cheese
    24 slices Canadian Bacon

Tips

Play with what works for you in the assembly. I like to spread the cream cheese on all the peppers, stick the pineapple in all the peppers and then wrap all the peppers.


Directions

To prepare jalapeno peppers cut off the top stem and cut lengthwise and remove seeds. (for more spicy and mild poppers leave innards in place and leave stem on one half so folks who don't like spicy know). Spread cream cheese in each half and stick a pineapple bit on top. Wrap a slice of Canadian bacon around each jalapeno with cream cheese and pineapple. Stick in a toothpick in to hold meat (optional). Place prepared jalapenos on a cooking rack that drains like a roasting pan for poultry. Bake at 375 for 25 to 30 minutes until edges of meat toast up a bit and the pepper is cooked al dente. Enjoy.
