Ingredients

    1/2 c. onion, chopped
    1 red bell pepper, diced
    2 cloves garlic, minced
    1/2 c. water
    1/2 c rice
    3/4 c cooked black beans

Tips

For faster prep, use leftover cooked rice and omit the water and uncooked rice.


Directions

Over medium heat, saute onion and pepper till onion is light brown. Add garlic and cook 1 more minute. Add water & salt (if desired) and bring to boil. Add rice, bring back to boil. Cover and reduce heat to low. Cook about 20 minutes. Remove from heat, stir in beans.
