My kids love these. They taste just like hash browns, but are much healthier. My kids love these. They taste just like hash browns, but are much healthier.
Number of Servings: 4


    2 medium potatoes, shredded
    2 medium carrots, peeled and shredded
    2 medium zucchini, shredded
    2 tbsp smart balance light margarine
    1/4 tsp salt
    1/4 tsp pepper
    1 tsp dried basil


Grate the potatoes. Rinse with cold water, drain well and pat dry.
Grate the carrots and zucchini and combine with the potatoes.
Melt the margarine in a large skillet on medium-high heat. When sizzling, add the vegetables and saute for 2 minutes. Add the basil, lower the heat to medium, cover and simmer for 7 to 10 minutes, or until the vegetables are tender. Season with salt and pepper.

    I liked the taste for the most part. If my husband had liked it I would make it again and reduce the amount of basil. - 8/31/09
