Ingredients

    1 1/2 pounds top sirloin or flank steak
    1 bottle (16 oz.) fat free Italian dressing, divided
    1 1/4 C wild rice
    12 oz. baby spinach leaves
    16 oz. bag chopped romaine
    1 large red onion, thinly sliced
    1 pint grape tomatos, halved
    1 C feta cheese crumbled
    1 C slivered or sliced almonds
    1/2 pound sliced mushrooms (optional)

Directions

In a large resealable plastic bag, marinate steak in 4 oz. (1/2 C) salad dressing. Seal bag and turn to coat. Put in refrigerator overnight. Prepare the rice according to package directons. IN a bowl, combine rice with 1/2 C salad dressing. Cover and refrigerate overnight. Drain and discard marinate from steak. Grill steak, uncovered over medium heat for 6-8 minutes on each side or until desired doneness is reached. Let stand covered for about 10 minutes. Slice thinly against the grain. Cool to room temperature.

To serve, arrange spinach on a large platter. Top with the rice, tomatos, onions, mushrooms and sliced steak. Sprinkle with almonds, drizzle with remaining dressing.

    I tried this .I sub the cheese for blue cheese. very good. also good with marsorella cheese. - 6/8/08
