Ingredients

1 lb. raw shrimp, peeled, deveined and tails removed
2 tsp minced garlic
1 tsp fresh ginger, minced
3 tsp sesame oil, divided
1 cup frozen peas, thawed
1 cup broccoli florets
1 cup chopped bell pepper, yellow, red or green
1/2 cup chopped scallions
1 cup chopped carrots
1 cup chopped cabbage
2 cups cooked brown rice
1 Tbsp soy sauce, low sodium
1 egg
1 egg white
Pinch cayenne pepper
Tips
Feel free to add more vegetables or different kinds of vegetables as you prefer.
Directions
Heat 1 tsp oil in a large wok. Add shrimp, garlic, and ginger. Cook three minutes or until shrimp are pink and opaque. Remove shrimp from skillet and keep warm.
Add remaining oil. Combine vegetables and cook for three minutes. Stir in rice, shrimp, and soy sauce. Cook three minutes more or until mixture is heated through.
In a small bowl, whisk together egg and egg white. Pour egg over rice mixture and stir to combine. Cook until egg is set, about three minutes.
Sprinkle with cayenne pepper and serve.
Serving Size: Makes 4 1.5-cup servings.
