    2 Tbsp. olive oil
    3/4 cup onion, chopped
    1/2 cup celery, chopped
    1 clove garlic, minced
    1/2 cup uncooked brown basmati rice
    4 cups stewed tomatoes, cut up, with juice
    1 tsp lemon pepper (or substitue 1 Tbsp lemon juice and 1/2 tsp black pepper)
    1/2 tsp salt
    1/8 tsp cayenne pepper
    6 fish fillets
    1/4 cup fresh parsley, chopped


Heat oil. Saute onion, celery and garlic. Stir in rice; saute about 5 minutes or until rice turns slightly brown. Add tomatoes and juice, lemon pepper, salt and cayenne. Place fillets in baking dish; cover with rice mixture. Cover with foil and bake at 400 degrees for 45-50 minutes, or until rice is tender. Allow to stand 5 minutes before serving. Sprinkle with parsley and serve with lemon wedges.
