Ingredients

    DRY-
    1 cup almond meal
    1 cup arrowroot flour
    1/2 cup tapioca flour
    1/3 cup flaxseed meal
    1/2 tsp. sea salt
    1/2 tsp. baking soda
    1 1/2 tsp. baking powder
    1 1/3 cup coconut palm sugar

    WET-
    2 large eggs
    2 TBS. EVOO
    1 tsp. almond extract
    1/2 cup warm water
    1 tsp. lemon juice

    FOLD IN-
    1 cup raisins
    1 cup sliced almonds

Directions

Preheat oven to 375 degrees.

Combine dry ingredients in one large bowl.
Combine dry ingredients in a smaller bowl.
Measure out the raisins and nuts.

Combine the wet and dry ingredients. Then fold in the nuts and raisins.

Pour into mini muffin liners. Place in oven for 20 minutes. Cool and enjoy. They freeze well also.

Serving Size: Makes 48 mini muffins. One serving equals one muffin.
