Ingredients

    I just halved the standard Libby recipe and used an 8 inch pie pan. One cup pumpkin, one egg, 6 ounces of evaporated milk ( half a can) and 3/8 cup granulated sugar, plus spices as you like - I used 1/2 teaspoon cinnamon, 1/4 teaspoon ground ginger and a pinch of salt. Some like cloves as well but we don't. Baked 50 minutes at 350 degrees Fahrenheit. Topped each 1/8th pie slice with 2 tablespoons lite Coolwhip, calories included.

Directions

Bake 50 mins at 350*F. Cool and serve with lite Coolwhip.
