Ingredients

    1/4 Cup Almond Flour
    4 Tablespoons of Almond Butter, unsweetened, raw
    8 Tablespoons of Peanut Butter, unsweetened, raw
    6 Teaspoons of Demerara Sugar, raw (bulk section)
    2 ounces of Coconut Flakes, unsweetened, raw (bulk)
    1 Pinch (tsp) of Baking Powder
    2 Fresh large eggs

Tips

Use dark-chocolate natural carob chips for a chocolatey treat - will add additional carbs so check labels!


Directions

In a large batter bowl, gently whisk 2 whole farm fresh eggs, blending until yellow. Add the peanut butter and almond butter, whisking until completely mixed. Add the coconut flakes and Demerara sugar, whisking until mixed. Toss in a pinch of baking powder and whisk lightly to blend. Drop teaspoon-sized level scoops onto a greased cookie sheet or cooking stone (preferred). Bake for 8-10 minutes for chewy cookies or 10-11 minutes for slightly crisp (will not get too crispy due to the ingredients). Enjoy with a small glass of almond or soy milk!
